Awesome Grilled Corn Recipe
Took a while for me to find a good grilled corn recipe so thought I'd share it here. Awesome for summer BBQs! Fairly quick and prep is not too bad. This is adapted from a recipe left in one of the comments on an allrecipes.com recipe.
Sorry for the blurry pic but the extra portion of stalk will break off making it super easy to peel off the outer layers of the husk.
Then trim off the hairy stuff and any leafy pieces sticking out with some kitchen shears.
The end result is a nice clean piece of corn with a few layers of husk still in place.
Grab yourself a bucket, cooler, or whatever holds the corn and fill it with clean cold water until the corn is covered. (Yes, corn floats, so you'll have to come back to flip them around after 30 min or so) Let the corn soak for at least 1 hour or up to several hours.
(Totally ate all the corn and forgot to take pics... I will try to add some soon.)
Carefully husk the corn and enjoy! Be careful because it is HOT and if left in the husks will stay hot for 30+ minutes. For optional "grill marks" you can husk the corn and place back on the grill for a few minutes. Just make sure not to do this for too long as it will cause the corn to dry. This is SUPER yummy and can all be done while the hubby is taking his "power nap"! Enjoy :)
Getting ready
Buy some fresh corn but don't peel off the husks. When choosing corn, peel back the husk slightly to get a peek at the kernels. If the kernels at the very top look full then it's likely a good ear :)
Now for one of the best tricks EVER! Hold the corn upside down and SMACK the bottom end against a counter edge (see pic above).
Then trim off the hairy stuff and any leafy pieces sticking out with some kitchen shears.

Soaking the corn
Grab yourself a bucket, cooler, or whatever holds the corn and fill it with clean cold water until the corn is covered. (Yes, corn floats, so you'll have to come back to flip them around after 30 min or so) Let the corn soak for at least 1 hour or up to several hours.
Grillin' Time
Heat up the grill (ours is HOT and the lowest setting is about 450F). Arrange the corn on the grill and rotate them every 5 minutes. Don't worry if you see the husks burning/catching on fire. The water absorbed in the husks help to create a "steam" effect on the corn. Cook the corn on the grill for 30 minutes.(Totally ate all the corn and forgot to take pics... I will try to add some soon.)
